Serves: 12 Crunch Bars
  • 2 cups brown rice crisps
  • 2 cups dark chocolate
  • 2 teaspoons coconut oil
  • ΒΌ teaspoon vanilla
  1. Line a 8x8 baking pan with parchment or wax paper.
  2. Melt your chocolate with the coconut oil using either the double boiler method or heat the chocolate with the coconut oil in the microwave in 30-second intervals, stirring the chocolate between each interval. Once the chocolate has thoroughly melted, add the vanilla.
  3. Stir in the cereal until evenly coated. Pour the mixture into the prepared pan and smooth into an even layer.
  4. Place pan into the freezer for about 15 minutes or until set. Remove from pan and cut into bars or desired shape. The crunch bars can be stored in an airtight container in the fridge for up to one month (if they last that long!).
