Dark chocolate and crispy rice,
Crunchy goodness in every bite!
What’s your favorite candy bar? I have fond memories of eating (and loving!) crunch bars as a kid. My family owned a small dry cleaning business, and so on the weekends I would go there to help. Every weekend my siblings and I would walk over to the store nearby and stock up on snacks and I would always choose the crunch bars. Some of my favorite candies during my adolescent years were Kit Kats and also Ferrero Rocher. Noticing a pattern here? I love desserts that have a crispy crunch to them! This is where the idea of making my own homemade crunch bars came from. It seemed simple enough, and sure enough it was! The longest part of the entire process was melting the chocolate, otherwise it all came together in minutes. The choice of chocolate is up to you, either dark or milk chocolate, whichever you prefer. I like to keep my indulgence snacks on the healthier side so I use organic brown rice crisps with dark chocolate. I’m sure Rice Krispies and milk chocolate would work fine too! Satisfy your sweet tooth with these mouth watering, homemade crunch bars!

- 2 cups brown rice crisps
- 2 cups dark chocolate
- 2 teaspoons coconut oil
- ¼ teaspoon vanilla
- Line a 8x8 baking pan with parchment or wax paper.
- Melt your chocolate with the coconut oil using either the double boiler method or heat the chocolate with the coconut oil in the microwave in 30-second intervals, stirring the chocolate between each interval. Once the chocolate has thoroughly melted, add the vanilla.
- Stir in the cereal until evenly coated. Pour the mixture into the prepared pan and smooth into an even layer.
- Place pan into the freezer for about 15 minutes or until set. Remove from pan and cut into bars or desired shape. The crunch bars can be stored in an airtight container in the fridge for up to one month (if they last that long!).
