This chicken butternut squash spaghetti made with einkorn pasta is SO good and creamy, and high in nutrients too! Butternut squash is loaded with antioxidants, vitamin A (immune boosting, perfect for the winter!) and is a cancer-fighting superfood. This recipe is so easy; you can cook your chicken and pasta and get started on your white sauce all while your butternut squash is in the oven! Listen up ladies! Looking for natural PMS pain relief? Butternut squash is rich in potassium and manganese which helps with muscle cramps. You may already know about my love for einkorn. That is what makes this one of my favorite recipes, being able to have (einkorn) pasta and not feel guilty about eating it. Enjoy!
- 12 oz einkorn spaghetti pasta
- 4 cups butternut squash
- 3 cups onions
- 2 cups chicken
- 2 cups milk
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon einkorn flour
- 3 teaspoons Himalayan salt
- 2 teaspoons garlic powder
- ¾ teaspoon pepper (plus a pinch more for the white sauce)
- ¼ teaspoon turmeric
